Wie wird Mezcal hergestellt?
Nur Mezcal mit der Bezeichnung 100% Agave wird ohne Zuckerzusatz vor der Fermentierung hergestellt. Dank tatkräftiger Unterstützung von Hefekulturen wird der Agavenbrei dann vergoren und anschließend zweifach gebrannt. Im Anschluss kommt der Mezcal für eine Lagerung (wenn auch häufig nur sehr kurz) in Eichenholzfässer.

What is mezcal de pechuga?
Unlike most mezcals, which undergo two rounds of distillation, mezcal de pechuga is triple-distilled, and the third distillation cycle is when the raw chicken, turkey, or other meat is hung above the still. The poultry then “cooks” in the distilling vapors, releasing aromas, proteins, and other substances that inform the final product.
What is pechuga made of?
Pechuga can be used in a more general sense to mean a mezcal that is distilled with fruits, nuts, and poultry breast but it almost always contains the poultry breast. An exception is the conejo which is made with rabbit instead of poultry (conejo means rabbit in Spanish).
